
The Cachaça
Saliníssima values the cachaceira culture and is one of the traditional and authentic cachaças of the Salinas region. The cachaça is an alternative to the palates that seek simplicity, rusticity and tradition in balance with modern life and with the best things in life.
High Standards
It brings together characteristics of a genuine artisanal cachaça of high standard. The aging process, done in balsam barrels, gives the drink a woody and soft flavor. The yellow tinted color and strong body reflect the care of maintaining the original production practices of artisanal cachaça from Minas Gerais.


The Fazenda Matrona
Saliníssima is produced at Fazenda Matrona, in the Salinas region, Minas Gerais, which since 1955, by the hands of Olímpio Mendes, has been dedicated to the planting of sugar cane to be used for the production of cachaça and rapaduras. The cachaças were bottled by hand and sold in their own home to farm staff, neighbors and friends. The rapaduras, on the other hand, were sold in the city on Saturdays, after traveling the long distance by ox cart.
Production of the Cachaças
In the process of production of cachaças, Alfredo Mendes de Oliveira, son of Olímpio, was responsible for the transportation and milling of the sugar cane, while his father was dedicated to the fermentation and distillation of the cachaça.
In the late 1990s, Alfredo and his son Lucas Mendes took over the farm, continuing the tradition of artisanal production of both cachaças and rapaduras. In 2003, the mill underwent improvements in structure and equipment, but without losing the artisanal essence of the production process of the cachaça. Today, continuing on in the Olímpio family, Fazenda Matrona remains one of the most important producers of cachaça in the Salinas region.
